Thanksgiving Favorite Recipe Swap - Sweet Potato Casserole

Sweet Potato Casserole

4 1/2 pounds sweet potatoes
1 cup sugar
1/4 cup milk
1/2 cup butter, softened
2 large eggs
1 teaspoon vanilla extract
1/4 teaspoon salt
1 1/4 cups cornflakes cereal, crushed
1/4 cup chopped pecans
1 tablespoon brown sugar
1 tablespoon butter, melted
1 1/2 cups miniature marshmallows
We started with this mouthwatering sweet potato casserole and modified the toppings to satisfy lovers of crunchy pecans and cornflakes as well as marshmallows.
Bake sweet potatoes at 400° for about 1 hour or until tender. Let cool to touch; peel and mash sweet potatoes.
Beat mashed sweet potatoes, sugar, and next 5 ingredients at medium speed with an electric mixer until smooth. Spoon potato mixture into a greased 11- x 7-inch baking dish.
Combine cornflakes cereal and next 3 ingredients in a small bowl. Sprinkle diagonally over casserole in rows 2 inches apart.

Bake at 350° for 30 minutes. Remove from oven; let stand 10 minutes. Sprinkle alternate rows with marshmallows; bake 10 additional minutes. Let stand 10 minutes before serving.

Thanksgiving Favorite Recipe Swap - Green Bean Casserole

Green Bean Casserole

1 can (10 3/4 ounces) Condensed Cream of Mushroom Soup
1/2 cup milk
1 teaspoon soy sauce
1 dash black pepper
4 cups cooked cut green beans
1 1/3 cups French's® French Fried Onions


Stir the soup, milk, soy sauce, black pepper, beans and 2/3 cup onions in a 1 1/2-quart casserole.
Bake at 350°F. for 25 minutes or until the bean mixture is hot and bubbling.  Stir the bean mixture.  Sprinkle with the remaining onions.

Bake for 5 minutes or until the onions are golden brown.

Thanksgiving Favorite Recipe Swap - Golden Macaroni and Cheese

Golden Macaroni and Cheese

1 (8-ounce) package elbow macaroni (about 2 cups uncooked macaroni)
2 cups milk
1/4 cup all-purpose flour
1 teaspoon onion salt
2 (10-ounce) blocks sharp Cheddar cheese, shredded (about 4 1/2 cups) and divided*
1 cup soft breadcrumbs (4 slices, crusts removed)
1/4 cup butter or margarine, melted
Ham
Bacon

This homemade baked macaroni and cheese recipe beats the boxed kind any day of the week. For a divine main dish, stir in chopped cooked ham before baking, and then sprinkle top with chopped cooked bacon before serving
Cook macaroni according to package directions; drain well. Set aside.
Place milk, flour, and onion salt in a quart jar; cover tightly, and shake vigorously 1 minute.
Stir together flour mixture, 3 1/2 cups cheese, and macaroni.
Pour macaroni mixture into a lightly greased 13- x 9-inch baking dish or 2 (11-inch) oval baking dishes. Sprinkle evenly with breadcrumbs and remaining 1 cup cheese; drizzle evenly with melted butter.
Bake at 350° for 45 minutes or until golden brown.
*20 ounces loaf pasteurized prepared cheese product, shredded or cut into small cubes, may be substituted. Omit breadcrumbs if using prepared cheese product.

Note: For testing purposes only, we used Kraft Cracker Barrel Sharp Cheddar Cheese.

Thanksgiving Favorite Recipe Swap - Creamy Fried Confetti Corn

Creamy Fried Confetti Corn

8 bacon slices, chopped $
4 cups fresh sweet corn kernels (about 8 ears)
1 medium-size white onion, chopped $
1/3 cup chopped red bell pepper
1/3 cup chopped green bell pepper
1 (8-ounce) package cream cheese, cubed $
1/2 cup half-and-half
1 teaspoon sugar $
1 teaspoon salt
1 teaspoon pepper

One of our most popular corn side dishes, this corn casserole does not disappoint. The sprinkle of bacon cuts the creamy richness of the dish, making it easy for this casserole to pair with just about anything.
Cook chopped bacon in a large skillet until crisp; remove bacon, and drain on paper towels, reserving 2 tablespoons drippings in skillet. Set bacon aside.

Sauté corn, onion, and bell peppers in hot drippings in skillet over medium-high heat 6 minutes or until tender. Add cream cheese and half-and-half, stirring until cream cheese melts. Stir in sugar, salt, and pepper. Top with bacon.

Thanksgiving Favorite Recipe Swap - Cranberry Sauce

Cranberry Sauce

1 cup (200 g) sugar
1 cup (250 mL) water
4 cups (1 12-oz package) fresh or frozen cranberries
Optional Pecans, orange zest, raisins, currants, blueberries, cinnamon, nutmeg, allspice.
Place the cranberries in a colander and rinse them. Pick out and discard any damaged or bruised cranberries. Put the water and sugar in a medium saucepan on high heat and bring to a boil. Stir to dissolve the sugar.

Add the cranberries to the pot and return to a boil. Lower the heat and simmer for 10 minutes or until most of the cranberries have burst.
Once the cranberries have burst you can leave the cranberry sauce as is, or dress it up with other ingredients. We like to mix in a half a cup of chopped pecans with a few strips of orange zest. Some people like adding raisins or currants, or even blueberries for added sweetness. You can also add holiday spices such as cinnamon, nutmeg, or allspice.

Remove the pot from heat. Let cool completely at room temperature, then transfer to a bowl to chill in the refrigerator. Note that the cranberry sauce will continue to thicken as it cools.

Thanksgiving Favorite Recipe Swap - Ambrosia Fruit Salad

1 (8oz) container frozen whipped cream
2 ½ cups shredded coconut
½ cup walnuts
1 (8 oz) can fruit cocktail (drained)
1 (8 oz) can pineapple chunks (drained)
1 (11 oz) can mandarin oranges (drained)
3 cups mini marshmallows
1 (10 oz) jar maraschino cherries (drained)
1 teaspoon ground nutmeg
1 teaspoon ground cinnamon


In a large bowl, combine the whipped topping, coconut, chopped nuts, fruit cocktail, pineapple, mandarin oranges, marshmallows, cherries, nutmeg and cinnamon. Mix together well and refrigerate for 30 to 45 minutes.
